    LA Barbecue is a sad shell of what it used to be. Your guess is as good as mine as to how it of all places got a Michelin star.

    Barb’s also should have been in the TM top 10, they got double snubbed.

    agree 100% on La BBQ – went last summer and thought it was good, but the sides were better than the brisket

    I keep meaning to go but almost never eat out on weekends.

    Being open for lunch two days a week probably didn’t help them. That’s more of a conceptual experience than a full time restaurant.

    All that to say they are probably well on their way to their own star, but 8hrs a week is not the same as executing 25-50+ hours weekly of Michelin star service.

    Because Cities pay to be on the tire guide to boost their tourism. The tire people are not attempting to be a true measure of merit. Its a sales tactic.

    Well, just look at it. Black beans and cotija cheese? And some kind of flavored-swirl bread? That stuff has no place in barbecue. If you’re trying to “elevate” barbecue, you’re doing it wrong.

    EDIT: Downvoters just proving they don’t have a fucking clue what good barbecue is. It’s both sad and hilarious. You probably think artichokes and bean sprouts go on pizza, as well. Posers.

    La Bbq knows the right people to get the right attention. Their reputation could sway critics since ultimately it’s all subjective. It’s not like they can go in and scientifically measure how many milligrams of smoke are in an ounce of brisket.

    Isn’t it as simple as Barb’s is in Lockhart and not Austin?

    From how I understand Michelin, each city’s tourism board has to pay them a fee to have them rate restaurants. So Austin, Dallas and Houston paid those fees. I don’t see why Michelin would go down to Lockhart with that in mind.

    Because barbecue shouldn’t be getting Michellin stars to begin with.
    To be clear, I fucking love barbecue.

    Further, Michellin is paid to visit cities now, typically by the tourist board or whatever that cities equivalent is. They always hit the hot spots and it *used* to be only fine dining for the most part, once we get passed the whole it was just a. Guide to promote tourism. Then about little less than 10 years ago they gave a food stall in Thailand a Michellin star and everyone lost their mind.

    They have made it a habit now of giving out stars to the few top fine dining places, and then throwing in some causal stuff that city is known for. I love barbs, I love LA, I think franklins is good. Give them mentions and move on.

    Barb’s BQ is my favorite BBQ place in the hill country area, maybe anywhere. Franklin’s does the best brisket but Barb’s is my favorite for all around everything and that green spaghetti, goddamn I might have to go this weekend.

    See the way to do La Barbecue as an out-of-towner, you go to Cigar Vault which is half a block away, order your food online, it’ll be ready in about an hour so you have time to enjoy a small aperitif cigar, you go get your food and come back and eat, wash up, and now you’re ready for a Pre-Meat Coma Cigar, then you uber back to your hotel.

  16. Odd to me that people are so down on La BBQ, it’s still one of the greats and, IMO, has the best sausage I’ve had anywhere. The Michelin guide didn’t give Franklin a star so not sure why you’d turn to them for BBQ advice, stick with Texas Monthly which has all three places mentioned here in their top 10

  17. I love both but I agree Barbs is better. I haven’t been to Goldee’s yet, but Barbs is the best BBQ I’ve had in Texas.

    Because the Michelin guide is a crock that’s far more interested in your presentation and decor than your actual food. Goldees didn’t get a star either despite being in a city they did review

    Never been to Barb’s and looking forward to trying it, but literally every review i read gushes over the green spaghetti. I judge a bbq spot on how well they do the basics like brisket and no one mentions the brisket, just that goddamn green spaghetti.

    IMO none of the bbq places anywhere should have gotten more than a bib. I haven’t been to them all in Texas, but none of them are anywhere near the level expected of a star. Don’t get me wrong, that doesn’t mean the bbq isn’t awesome. You just expect a different level of dining with a Star.

  27. La Barbeque used to be amazing. Legitimately. I went back 10 years after work took me in the wrong direction, and it wasn’t even good. So sad.
